Stuffed mushrooms healthy recipe

For this recipe, you will need:

-1 pound of mushrooms

-1/4 cup of diced onion

-1 clove of minced garlic

-1/4 cup of chopped kale

-1/4 cup of bread crumbs

-2 tablespoons of olive oil

-1/4 teaspoon of salt

-1/4 teaspoon of black pepper

Instructions:

1. Preheat oven to 350 degrees F (175 degrees C).

2. Clean mushrooms with a damp paper towel. Carefully twist the mushroom stems to remove them. Chop the stems finely, and set caps aside.

3. Heat olive oil in a skillet over medium heat. Add diced onion, garlic, and chopped mushroom stems. Cook until softened, about 5 minutes.

4. Add kale, bread crumbs, salt, and black pepper to the skillet. Mix together until ingredients are fully combined. Spoon the mixture into the mushroom caps. Arrange stuffed mushrooms on a baking sheet lined with parchment paper.. 5Bake in preheated oven until stuffing is browned, about 20 minutes
