A quesadilla is a Mexican dish that consists of a tortilla filled with cheese and other ingredients, then grilled or fried. Quesadillas are a staple of Mexican cuisine and are often served as a main course or as a snack.

A healthy and filling lunch or dinner

Quesadillas are a lunch or dinner favorite, but they can be loaded with unhealthy ingredients. This quesadilla recipe uses whole wheat tortillas and lean chicken, and is packed with veggies for a healthy and filling meal.

A great way to use up leftover vegetables

Healthy quesadillas are a great way to use up leftover vegetables. They are also a good source of protein and fiber. Quesadillas can be made with whole wheat tortillas or corn tortillas.

To make a healthy quesadilla, start by sautéing some chopped onion and peppers in a tablespoon of olive oil. Add in any other chopped vegetables you have on hand, such as zucchini, mushrooms, or broccoli. Once the vegetables are cooked, add them to a whole wheat tortilla along with some shredded cheese. Fold the tortilla in half and cook in a skillet over medium heat until the cheese is melted and the tortilla is crispy. Serve with sour cream or salsa on the side.

A kid-friendly healthy recipe

Do your kids love quesadillas? Mine do! But sometimes I worry that they are eating too much cheese or not getting enough vegetables. That’s why I decided to try making a healthy quesadilla recipe that is both nutritious and delicious.
